The structure is made of independent houses + eight apartments perfectly restored according to the tradition of the tuscan style. The apartments’ names are inspired by the Mediterranean flora: Mirto, Ginepro, Tamerice, Leccio.

WINES

The various wines which are produced at the ancient Fattoria di Paterno ( Canaiolo nero, Trebbiano, Sangiovese and Malvasia bianca) have all extraordinary characteristics due to their meticulous and highly professional processing.This delicate procedure which embraces grape-harvesting, squeezing, fermentation, decantation and bottling gives to the wine structural peculiarities of the highest level.

The storage of about 18-20 months in barrels or barriques of French oak for example allows to improve the wine’s colour remarkably, to intensify its flavour and to emphasize its body.

The Vin Santo of Chianti is also produced by means of a particular procedure.

The Trebbiano and Sangiovese grapes will be placed in a proper and well aired room, after about 3 months they will have dried sufficiently and be ready to be squeezed.

The resulting must will be stored in a room isolated from the rest of the wine cellar, where it will be exposed to the changes of summer and winter temperatures.

This must will ferment very slowly obtaining those qualities of aromatic fragrance and palatable, warm and fruity flavour, which make it so characteristic.
